# Directions:

01 - Preheat the oven to 400°F.
02 - In a large mixing bowl, combine all the prepared vegetables.
03 - Add olive oil, minced garlic, oregano, thyme, smoked paprika, salt, and pepper. Toss thoroughly to coat evenly.
04 - Spread the vegetables in a single layer on a baking tray lined with parchment paper.
05 - Roast for 30 to 35 minutes, stirring once halfway through, until the vegetables are tender and slightly caramelized.
06 - Transfer to a serving dish. Optionally top with crumbled feta and chopped fresh parsley. Serve warm.
