# Directions:

01 - Rinse rice under cold water until water runs clear. In a medium saucepan, bring water to a boil. Add rice and salt, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork, stir in lime juice and chopped cilantro. Keep warm.
02 - In a small saucepan, combine black beans, cumin, chili powder, and a pinch of salt. Heat over medium, stirring occasionally, until warmed through for about 5 minutes. Set aside.
03 - Heat olive oil in a large skillet over medium-high heat. Add chopped onion and cook until softened for 2-3 minutes. Add garlic and cook for 30 seconds. Add ground beef, breaking it up with a spoon. Cook until browned and cooked through for 5-6 minutes. Drain excess fat if needed.
