# Directions:

01 - Combine rice, water, and salt in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat, fluff with a fork, then stir in lime juice and chopped cilantro. Set aside and keep warm.
02 - Heat olive oil in a large skillet over medium heat. Add onion and cook for 2-3 minutes until softened. Stir in garlic and cook for 30 seconds. Add ground beef and cook, breaking up with a spoon, until browned and cooked through, about 5-6 minutes. Drain excess fat if needed.
03 - Add chili powder, cumin, smoked paprika, oregano, salt, and black pepper to the beef. Cook for 1 minute, stirring constantly. Stir in tomato paste and broth. Reduce heat and simmer until thickened, about 4-5 minutes. Taste and adjust seasoning if necessary.
