# Directions:

01 - In a large bowl, whisk together olive oil, BBQ sauce, soy sauce, honey, garlic, smoked paprika, salt, and pepper until well combined.
02 - Add chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, up to 2 hours for deeper flavor.
03 - Meanwhile, soak wooden skewers in water for 30 minutes to prevent burning during grilling.
04 - Thread chicken, pineapple, bell pepper, and red onion alternately onto skewers, leaving a little space between each piece for even cooking.
05 - Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
06 - Grill skewers for 12-15 minutes, turning every 3-4 minutes and basting with extra marinade, until chicken is cooked through and has a nice char.
07 - Transfer to a platter, garnish with chopped cilantro and serve with lime wedges.

# Expert Tips:

01 -
  • The marinade does double duty as a basting sauce, building layers of flavor with every turn on the grill
  • Everything cooks on one skewer, meaning less cleanup and more time enjoying the evening
02 -
  • Do not marinate the pineapple and vegetables with the chicken or they will become mushy and overly seasoned
  • Leave some space between pieces on the skewers so heat can reach all sides and nothing steams instead of grills
03 -
  • Reserve some of the marinade before adding the raw chicken so you have a safe sauce for basting during grilling
  • Let the skewers rest for a couple of minutes after grilling so the juices redistribute
