Chocolate Peanut Butter Overnight Oats (Printable)

Creamy oats with chocolate and peanut butter make for a satisfying, protein-packed morning meal that preps in minutes.

# Ingredient List:

→ Base

01 - 1 cup old-fashioned rolled oats (90 g)
02 - 1 cup milk (dairy or plant-based) (240 ml)
03 - 1/2 cup Greek yogurt or plant-based yogurt (120 g)
04 - 2 tbsp unsweetened cocoa powder
05 - 2 tbsp chia seeds, optional

→ Sweetener

06 - 1-2 tbsp maple syrup or honey, to taste

→ Flavor & Nut Butter

07 - 3 tbsp creamy peanut butter
08 - 1/2 tsp vanilla extract

→ Toppings

09 - 2 tbsp mini chocolate chips
10 - 2 tbsp chopped roasted peanuts
11 - Sliced banana or strawberries

# Directions:

01 - In a medium bowl or jar, combine oats, milk, yogurt, cocoa powder, chia seeds (if using), maple syrup, peanut butter, and vanilla extract. Stir thoroughly until well mixed and peanut butter is evenly incorporated.
02 - Cover and refrigerate overnight, or for at least 6-8 hours, to allow oats and chia seeds to soften and thicken.
03 - In the morning, stir again. If mixture is too thick, add a splash of milk to reach your desired consistency.
04 - Top with chocolate chips, chopped peanuts, and fresh fruit if desired. Serve chilled.

# Expert Tips:

01 -
  • The texture evolves overnight into something impossibly creamy, almost like chocolate pudding crossed with cookie dough
  • Morning prep becomes zero stress when you are rushing or just feeling lazy
  • That chocolate peanut butter combo never gets old no matter how many times you make it
02 -
  • The first time I made these I accidentally used quick oats and ended up with something closer to chocolate baby food
  • Chia seeds need at least eight hours to fully hydrate or you will be crunching through little sand pellets
  • These actually taste better on day two when the flavors have had more time to become friends
03 -
  • Use a wide mouth mason jar because nothing is worse than trying to clean peanut butter out of the narrow neck of a regular jar
  • Give the mixture one last stir before bed to prevent the oats from settling in a hard layer at the bottom
