01 - Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
02 - In a large mixing bowl, beat egg whites with cream of tartar and salt using an electric mixer until stiff peaks form.
03 - In a separate bowl, combine egg yolks and softened cream cheese and mix until smooth.
04 - Carefully fold the egg yolk mixture into the whipped egg whites until just combined, avoiding overmixing.
05 - Spoon mixture onto the prepared baking sheet, shaping into two 8-inch circles.
06 - Bake for 20 minutes, or until cloud bread bases are golden and firm.
07 - Remove cloud bread from the oven and increase temperature to 400°F (200°C).
08 - Spread pizza sauce over each cloud bread base. Scatter mozzarella cheese, pepperoni, or preferred toppings, and sprinkle with dried oregano.
09 - Return pizzas to oven and bake for 5 to 7 minutes, until cheese is melted and bubbling.
10 - Add fresh basil leaves for garnish if desired. Slice and serve promptly.
