01 - Toast the bread slices until golden and crisp.
02 - In a small bowl, mash the avocado with lemon juice, salt, black pepper, and chives (if using) until creamy but slightly chunky.
03 - Heat a nonstick skillet over medium heat. Crack in the eggs and cook to your liking (fried, poached, or soft-boiled). For fried eggs, cook 2–3 minutes for runny yolks or longer for firmer yolks.
04 - Spread the mashed avocado evenly over the toasted bread.
05 - Top each toast with a cooked egg. Sprinkle with feta cheese, red pepper flakes, and extra black pepper, if desired. Serve immediately.
