# Directions:

01 - Combine ground chicken, chopped onion, garlic, soy sauce, grated ginger, salt, and pepper in a large bowl. Mix until fully incorporated.
02 - Divide the chicken mixture into 4 equal portions and shape into uniform burger patties about 1/2 inch thick.
03 - Preheat a grill or grill pan over medium heat and lightly brush with olive oil.
04 - Cook the chicken patties for 5-6 minutes per side until fully cooked and juices run clear (internal temperature reaches 165°F). If adding cheese, place a slice on each patty during the last minute and cover to melt.
05 - Grill pineapple rings for 2 minutes per side until lightly caramelized with grill marks.
06 - Place burger buns cut-side down on the grill for 1-2 minutes until golden and lightly crisp.
07 - Spread barbecue sauce on the bottom half of each toasted bun. Layer with lettuce, tomato slices, grilled chicken patty, caramelized pineapple ring, and red onion. Top with the bun crown.
08 - Serve immediately while hot, accompanied by sweet potato fries or coleslaw if desired.

# Expert Tips:

01 -
  • The grilled pineapple caramelizes into something that makes regular burgers feel boring by comparison
  • Everything cooks on the same grill so cleanup is surprisingly minimal
02 -
  • Chicken patties shrink more than beef so make them slightly wider than your buns initially
  • Grilling the pineapple first will make cleanup harder because the sugars get sticky on the grates
03 -
  • Chill formed patties for 15 minutes before grilling if they feel too soft to handle
  • Leftover grilled pineapple is incredible chopped into morning oatmeal or yogurt
