- Combine ground chicken, chopped onion, garlic, soy sauce, grated ginger, salt, and pepper in a large bowl. Mix until fully incorporated.
- Divide the chicken mixture into 4 equal portions and shape into uniform burger patties about 1/2 inch thick.
- Preheat a grill or grill pan over medium heat and lightly brush with olive oil.
- Cook the chicken patties for 5-6 minutes per side until fully cooked and juices run clear (internal temperature reaches 165°F). If adding cheese, place a slice on each patty during the last minute and cover to melt.
- Grill pineapple rings for 2 minutes per side until lightly caramelized with grill marks.
- Place burger buns cut-side down on the grill for 1-2 minutes until golden and lightly crisp.
- Spread barbecue sauce on the bottom half of each toasted bun. Layer with lettuce, tomato slices, grilled chicken patty, caramelized pineapple ring, and red onion. Top with the bun crown.
- Serve immediately while hot, accompanied by sweet potato fries or coleslaw if desired.
