01 - In a small bowl, gently toss the blueberries with honey and black pepper if using; set aside.
02 - Spread a thin layer of cream cheese on one side of each bread slice.
03 - Sprinkle shredded cheddar evenly over two slices on top of the cream cheese layer.
04 - Spoon the blueberry mixture evenly over the cheddar layer.
05 - Top with the remaining bread slices, cream cheese side down, to form sandwiches.
06 - Butter the outsides of each sandwich generously.
07 - Heat a large skillet over medium heat until hot.
08 - Place sandwiches in the skillet and cook for 3-4 minutes per side, pressing gently, until bread is golden brown and cheese is melted.
09 - Remove from skillet, let rest for 1 minute, then slice diagonally and serve immediately.
