01 - Whisk together eggs, milk, smoked paprika, cumin, chili flakes, salt, and pepper in a medium bowl until fully combined.
02 - Heat 1 tablespoon butter in a nonstick skillet over medium heat. Add diced onion and jalapeño; sauté for 2–3 minutes until softened and fragrant.
03 - Pour egg mixture into the pan. Scramble gently with a spatula, pushing eggs across the pan until just set but still moist. Remove from heat and fold in tomato and cilantro.
04 - Lay out tortillas on a clean surface. On half of each tortilla, layer: scrambled egg mixture, sliced avocado, cheddar cheese, Monterey Jack, and feta. Fold tortillas in half to encase filling.
