Agar Agar Fruit Jelly (Printable)

Light vegan jelly made with agar agar and fresh mixed fruits. A refreshing dessert perfect for warm weather.

# Ingredient List:

→ Jelly Base

01 - 2 cups water
02 - 1 1/2 teaspoons agar agar powder
03 - 1/2 cup granulated sugar
04 - 1/2 cup fruit juice (orange, apple, or mango)

→ Fresh Fruit

05 - 1/2 cup diced strawberries
06 - 1/2 cup diced kiwi
07 - 1/2 cup diced mango
08 - 1/2 cup diced pineapple
09 - 1/4 cup blueberries

# Directions:

01 - Wash, peel, and dice strawberries, kiwi, mango, and pineapple into small, bite-sized pieces. Rinse blueberries and set all prepared fruit aside.
02 - Combine water and agar agar powder in a medium saucepan. Whisk thoroughly to disperse powder evenly and prevent clumping.
03 - Bring mixture to a boil over medium heat, stirring constantly. Reduce heat and simmer for 2 minutes until agar agar is completely dissolved and liquid becomes clear.
04 - Add sugar to the hot liquid, stirring continuously until fully dissolved. Remove from heat source.
05 - Pour in fruit juice and mix well. Let cool for 2-3 minutes until slightly warm but still fluid (do not allow to begin setting).
06 - Distribute prepared fruit pieces evenly across the bottom of a silicone mold or glass dish, ensuring uniform presentation.
07 - Gently pour warm agar agar mixture over arranged fruits, ensuring all pieces are submerged. Allow to cool at room temperature, then refrigerate for at least 45 minutes until completely set.
08 - Unmold carefully or cut into cubes. Serve chilled for best texture and flavor.

# Expert Tips:

01 -
  • Its somehow fancy enough for dinner parties yet simple enough for a Tuesday afternoon snack
  • The fruit stays suspended in beautiful suspended animation like edible art
  • You can make it ahead and it actually gets better after a day in the fridge
02 -
  • Agar agar sets at room temperature and does not melt again like gelatin does
  • Fresh kiwi and pineapple contain enzymes that prevent setting unless cooked first
  • The jelly will be firmer than what you are used to from gelatin desserts
03 -
  • Let the agar mixture cool slightly before pouring or the fruit will float to the top
  • Silicone molds release the jelly perfectly every time without any sticking
