- Preheat oven to 400°F or set air fryer to 375°F. If using oven, line a baking sheet with parchment paper.
- Lay flour tortillas on a clean work surface. Spread 2-3 tablespoons of pizza sauce evenly over the center of each tortilla, leaving a 1-inch border around the edges.
- Divide mozzarella cheese, pepperoni (or mushrooms), bell peppers, olives, red onion, oregano, and garlic powder evenly among the tortillas, spreading over the sauce layer.
- Fold in the left and right edges of each tortilla about 1 inch. Starting from the bottom edge, roll up tightly burrito-style to completely enclose the filling.
- Lightly brush or spray the outside of each burrito with olive oil to promote even browning and crisping.
- Place burritos seam-side down on the prepared baking sheet. Bake for 18-20 minutes until golden brown and crispy, turning once halfway through cooking.
- Arrange burritos in a single layer in the air fryer basket (cook in batches if necessary). Air fry at 375°F for 8-10 minutes, flipping halfway, until evenly browned and crisp.
- Remove from oven or air fryer. Sprinkle with grated Parmesan and fresh basil leaves if desired. Serve immediately with additional pizza sauce or ranch dressing for dipping.
