# Directions:

01 - Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 3 to 4 minutes until translucent.
02 - Stir in minced garlic and grated ginger; cook for 1 minute until fragrant.
03 - Add diced carrot, parsnip, sweet potato, butternut squash, and cauliflower florets. Cook for 5 minutes, stirring occasionally.
04 - Add curry powder, ground cumin, coriander, turmeric, smoked paprika, optional cayenne, salt, and black pepper. Stir thoroughly to coat the vegetables evenly.
05 - Add rinsed lentils, diced tomatoes with juices, coconut milk, and vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer for 25 to 30 minutes, stirring occasionally, until vegetables and lentils are tender.
06 - Stir in chopped kale and simmer uncovered for an additional 5 minutes until wilted.
